Ingredients:
- 1/2 cantaloupe, peeled, seeded and chopped
- 1/2 honeydew melon, peeled, seeded and chopped
- 7/8 cup plain low-fat yogurt
- 1 1/2 tablespoons peeled, finely chopped fresh ginger root
- 1 tablespoon fresh lime juice
- 1 teaspoon freshly grated lime zest
- Fresh mint leaves
Directions:
Place all ingredients but mint into a food processor with a steel blade. Process until smooth, transfer to a container and refrigerate for 1-4 hours. Garnish with Mint.
